  • 1 small watermelon
  • 250g Greek feta cheese
  • 1 red and 1 green medium size chilli
  • 1 clove crushed garlic
  • Greek virgin olive oil
  • 1 small bunch of fresh mint
  • Zest of a lemon

Cut 200g Greek feta cheese into chunks and mix with half a green and half a red chill pepper, seeded and cut into thin slices.

Add 1 clove of crushed garlic and coriander. Pour virgin olive oil over the mixture. Add a little sea salt and a pinch of brown sugar and leave it covered in a cool place.

Cut the flesh of a small, seeded watermelon into chunks and add the marinated feta mixture.

Scatter over the leaves of a small bunch of fresh mint plus a few drops of lemon juice, and add olive oil if needed.

Season with freshly ground black pepper.
