Passion fruit and honey marinated strawberries with vanilla ice cream

- 100g crocant
- 60g vanilla ice cream
- 150g fresh strawberries
- 15g passion fruit juice
- 25g honey
- 40g whipped cream
- 15g vanilla sauce
- 15g balsamic caramel
Place the crocant basket in the middle of the plate.
Scoop the ice cream into the middle of the basket.
Dissolve honey in passion fruit juice.
Cut strawberries into four and toss them with the honey and passion fruit juice, then place them on top of the vanilla ice cream.
Sprinkle vanilla sauce and balsamic caramel around the basket.
Pipe whipped cream for garnish.
