Hvar gregada (Croatian fish)

- 1kg of quality, various white fish
- 3 cloves of garlic finely minced
- 4 onions
- 1kg of potatoes, sliced
- 2.5dcl of white wine
- 1dcl of olive oil
- A few bay leaves
- 1 sliced parsley leaf
- Salt and pepper
For this meal, use a large round pot with a low rim. Prepare the potato: slice it in round, thin pieces. Place in a separate pot and cook until water starts to boil, cut the heat and leave to stand.
Put the olive oil and garlic on the heat and when garlic starts to fry add fish sliced into 3–6cm chunks. Do not stir with any kind of ladle – just shake the whole pot.
When fish starts to stick to pot, add wine, salt, pepper, bay leaves and potatoes. Shake well and add water to cover.
Cook until potato is soft (15–20 min). At the end add parsley. Serve with a spoon.
