Canarian ragout of vegetables

  • 500g courgette
  • 500g tomatoes
  • 500g peppers
  • 250g onions
  • 4 spoons olive oil
  • 2 garlic heads
  • Salt

Heat the olive oil in a frying pan and when hot, add the chopped onions, garlic and parsley.

Slice the peppers to remove the seeds. Chop them and add to the pan.

Boil the tomatoes in hot water, remove the skin and chop them.

Mix the rest of the ingredients and boil for a couple of minutes.
