St. Nicolas Bay is almost its own peaceful village, filled with activities galore – from sunbathing on the hotel’s own private beach, experiencing the many watersports (including diving courses), lying by the gorgeous infinity pool or watching one of the hotel’s outdoor film screenings. The beautiful villas are perfect for families and couples alike, offering privacy and space – we felt as if we were the only people there, which added to the romance.

I would highly recommend spending a night dining at the hotel’s Kafenion restaurant which serves traditional Greek cuisine. They have a few enclosed tables at the edge of the sea where you can dine by candlelight. The Minotaure restaurant serves fine international cuisine and sushi around a candlelit pool. A lot of the produce is grown in the hotel’s own kitchen garden, including herbs, spices, tomatoes, aubergines and fresh chillies.

When our taxi dropped us off and we walked past the gorgeous carved stone statues and hot pink bougainvillea, I knew that this was going to be a trip I would never forget.

Nothing was too much trouble for the staff. Our room was stunning: crisp white linens, chic furniture, and lots of space. But the best was when we opened the curtains to discover floor to ceiling windows with the most stunning views over Mirabello Bay – and best of all, our own private infinity edge pool. This gave us the utmost privacy to enjoy our time together.

Throughout the resort, the hotel has been designed not to interrupt the natural environment but to complement the infrastructure. There were elements of this philosophy everywhere, right down to the rocks at the bottom of our pool that gave the room a unique, almost ancient Greek touch. There was even a rainfall shower which had a door extending out onto our pool area.
